I would be pleased to share. I use the 1/2/3 method for my sourdough and it works every time. I have a good active starter and I feed it the night before so it is really bubbly when I make the dough. So, 1 part active starter, 2 parts water, 3 parts flour and 2% salt. 125 gr active starter
250 gr water
375 gr of bread flour
2% (7 grams of salt)
3 rounds of stretch and fold 30 minutes apart
Bulk ferment until showing good signs of fermentation and then shape into a Banneton. I leave it on the counter for an hour or so then into the fridge overnight to be baked anytime the next day. Bake in a covered container at 450 for 30 minutes and then remove the lid. Watch it until you like the colour and then get out the butter !!!
Same dough makes baguettes as well

I also bake bread in a covered pot (cast iron Lodge) from time to time when I want to do what we call a “pagnotta”. I’ve sadly given up on my sourdough as I was to lazy to keep it going (threw it away in a moment of too muchstress!).

If repair rate is the key factor, go with the Instant Pot Duo or Pro — they’re the most reliable, widely used, and easiest to service. Extra features are nice, but durability is what really counts. 👍
