Breakfast bread (and cheesecake)
Paolo
Posts: 187
Tonight I had my usual breakfast bread ready to bake, only to find out that my daughter needed the oven for her cheesecake. No better excuse to fire up the Egg for the first time after the holidays!

Great looking bread and cake. On the old forum there were some eggheads with extra Egg reserved for baking only.canuckland

@Canugghead - that's @RRP to this day.
@Paolo - you have got this bread thing dialed in. Looks like your daughter has it together as well. Beautiful.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Both items look terrific!I could never quite figure out how to seed the top of a loaf, like that.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

Another home run, @paolo (x2!!). Hats off to you and your progeny.Often wish I did more baking on the Egg. Will have to change that.

Thanks for the comments!
@caliking - I mix one egg yolk a couple tbsp of milk and brush it over the dough, than pour any variety of seeds that I like (sunflower, linen and poppy seeds in this case). I also put seeds in the dough.
Just for the record this was 1/2 wholegrain wheat, 1/4 durum wheat semola, 1/4 type 0 wheat, 65% hydration, dry yeast and salt.
Cooked on an alu pan, raised over a baking stone with aluminium foil balls, starting at 430 F and finishing around 380 F (40 minutes).

Thanks @Paolo. I'll try that. I've seen recipes where folks soak a mix of seeds, and then roll the top of the loaf in it. Or, something like that. I don't have that kind of manual dexterity!#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

JFC- that is beyond forum envy right there. Not even Uma can capture the talents and outcome.
But Uma is the best I've got: Sweet and so much more!
