Can't remember how I caught this hair, but it's been living in my head for a bit. Seems to also be known as Chinese breakfast crepe, on the interwebz.
Batter is made of APF, mung bean flour, and millet flour.
Spread it like a crepe. Top with egg, and stuff.

Flip it. Add sauce (sweet bean paste, fermented tofu, doban jian), and cilantro, scallion greens, fried wonton strips, lettuce.



Doesn’t look like much, but it ate well 😀

Whoa!! That looks great - might investigate this sub in something for the APF to make it gluten free.

Try chickpea flour (besan in the Indian stores). Mix the batter to slightly more runny than pancake batter consistency.
