Some great ideas there! I guess I've been so accustomed to saving the big pieces for low and slow that I was reluctant to break them up for the MiniMax.
I really should take some shots of my cooks on the Minimax, but here is a shot of a meal. I was in NYC the other day taking my cat to a cardiologist (he's ok) that a friend works at and it's near Sunrise Mart, which is a Japanese grocery. I had a nice sushi lunch there for $9 and did some shopping. I found a more Japanese BBQ sauce called Yakiniku Tare and bought it. I always (ok, usually!) enjoying trying things I don't know about. Then Saturday I was at our Farmer's Market where there is a butcher who sells Mangalista pork. That's a rare, amazing breed. Very furry pigs. The pork has tons of marbling, not like the dry stuff you get at the store. I picked up two beautiful collar steaks, dry brined for 30 minutes, then took the salt off and cooked them on the Mini. It was hot and fast since they were thin. I gave them two coatings of the sauce. In the end, I was running low on coals since dinner was delayed so I had to give them a bit more sear with my bernzomatic, but the smoky smell was there, it was all ok. That's Nasu Dengaku, miso-glazed eggplant. I've been using this site to get ideas.

I'm thinking I might try binchotan charcoal next. That's a whole other world of cooking. Maybe put a little bit at the bottom of the fire box and then drop a grill right on top.
