Ribs of different thickness

Throwing some Costco St. Louis ribs on today and after breaking them out of the pack I realized the very different thickness between the three. Frustrating - usually Costco ribs are pretty consistent.
Anyway - one of pretty thick, other middle of the road, the third is VERY thin. Would you wrap the thicker/thinner one to try and even out the result or just pull at different times?
While I'm at it out of curiousity how long do your STL cooks usually go?

Pull at different times is the most fool-proof way to go, otherwise you run the risk of the overcooked ones being mushy. The bend test and bone separation will be your indicator on timing.

Yeah sounds about right. Thanks for the input!Dyal_SC said:Pull at different times is the most fool-proof way to go, otherwise you run the risk of the overcooked ones being mushy. The bend test and bone separation will be your indicator on timing. -
Toothpick test for the win with all ribs, even dino beef ribs.
Likely too late for this go round.

Too late here too, but you might as well game the system and put on the thick ones, the medium ones 30 minutes later, and the thins 30 minutes after that. Still pull whenever something’s ready, but hopefully they’ll all be ready at roughly the same time."Hallelujah, Noel, be it Heaven or Hell,
