Stuffed Pork Loin with Roasted Plums, Brussels Sprouts and Sweet Potatoes

Didn’t have much of a game plan for this one, so just combined a few things I had on hand. Started by brining a small bit of pork loin in the dregs of a homemade pickle juice, then slicing horizontally and stuffing it with sage, parsley, garlic and olive oil - all blended together in the Vitamix. Then I seared the loin on all sides. 



Once appropriately browned, I topped it with more of the filling, gave some sliced plums a quick pan fry and placed them on top. 



Threw it in the oven at 400, and in the meantime, prepped the Brussels sprouts (S&P) and sweet potatoes (sweet onions, S&P). Put the potatoes in first, then added the sprouts when timing seemed right. 

Took the lot out in stages as they appeared done. 



All in all, happy with the meal.

  • Thank you, @botch. Our household has become more and more attune to food waste. Most of our meals are now guided by the shelf life of our fridge contents.

    Excellent; I actually finished an entire 8-pack of bok-choy today, the last one had some wilted outer leaves, but the rest was edible.  Can't complain about a week's-worth of veggies for $1.85.   :)

    Good grief, sir... this is outstanding!! I don't think I've ever had roasted plums, so trying to wrap my brain around the excellent flavors. I really want to try this.

    Wish I had your mental and cheffing dexterity right there.  Audible and great banquet was the end-game.   Magazine quality photos for the win.  Sweet!

    Agree with you on the bok-choy. Generally lasts really well in the vegetable crisper. The leaves usually provide first indication of spoilage, so it’s really easy to just lob off the bits that are starting to turn and carry on. 

    The Brussels sprouts we had tonight were providing some indication of being past their prime. Pulled off the outer layers from each sprout and all else was golden.
