Who wants cactus for dinner???

Technically making this with some chicken for my hubby, but could easily be vegetarian or vegan tacos based on your needs. If you have ever had cactus and found it too slimy…try and grill it close to or on the coals with “fingers” cut in the pads like this. I am 100% not team slime, but I eat loads of okra, cactus, and octopus and enjoy all of them slime free.

Very neat cook. Think I’ve ever only had pickled cactus. Did you grow this, or get it at the store?

Final product includes a corn and tomatillo salsa from Saturday’s cook. I always try and plan ahead and make stuff for several days of sides in advance so I’m not scrambling to get meals on the table.

I picked it up at a local market. I have some growing in the back of the property, but it is so inexpensive here it is easier to grab some when I am shopping unless I am in a mood to go harvest some.
