Recently noticed that when browsing recipe sites on my phone, a lot of websites seem to either keep my Auto-Lock from activating such that my screen never goes to sleep, or offer a toggle activating said option. Either way, pretty handy feature.

I print the recipes I like and insert them into plastic sleeves that go in a three ring binder. I’ve been burned before when I went online to retrieve the recipe only to find it had gone the way of the Buffalo.

Just as you arrive at the ingredients list, a giant ad video finally loads and shoves the list up or down and you accidentally click on the ad.Large, Medium, MiniMax, 36" Blackstone

^^^ This. I am not a tech enthusiast and don’t like the privacy implications, but smart speakers are fantastic in the kitchen for the same reason. Thanks @GrateEggspectations for this thread, it got me thinking about watching Pepin's chicken deboning video while butchering a turkey with my hack saw, lol.
Next time I can just say Alexa pause, Alexa resume, Alexa restart, woohoo! Have to figure out why Alexa rewind is not working for me though.

This looks like the worst crepe recipe ever, and I’m an Alton fan girl so I don’t wanna start a fight. But… my mom was a chef and the first recipe I ever learned was 1 egg, 1/4c milk, 1/4c flour, 1Tbs melted butter (unsalted), and a pinch of salt and sugar for each person you are serving. Allow batter to rest 20-30 minutes after whisking before you cook. Also make these on a tortilla pan on your BGE…. Crepes were the first thing I really delved into cooking growing up, and I think the recipe I used to use was either from the Silver Palate or a Good Housekeeping cookbook. Have no idea how those proportions matched up against this recipe of Kenji’s, but the results on this were nowhere near as traumatic as your post would imply.As he is known to do, Kenji tested the rest method you describe against non-rested batter and concluded “the difference wasn’t so obvious”.I had no ghee on hand so the milk solids did brown right quick, but I tried to minimize that by performing the buttering of the pan and the application of the batter in very quick steps. -
I saw the SE at the top and figured it was from Alton’s Serious Eats show. The proportions in that look like you would get a thin pancake not a crepe. But if you’re happy eat up!

I hope they do. Unfortunately mom is dead so I’m guessing her instructors at the Sorbonne are too and can’t share their thoughts with Kenji. It also appears that I need to rewatch Good Eats if it has been so long I have given it a different name, thanks for the correction!
