they were brined in a “hot n spicy”. Not sure what that means. I buy a lot of meat at wholesale market in bulk. Thawed them, and did a cilantro lime for overnight. Then after frying them I dusted in Lowrys season salt. Tossed some in Buffalo Wild Wings Nashville hot -
Last I checked we are only into the third week of February. So, 100 lbs/8 weeks amounts to better than 12 lbs /week. That is serious eats! Wings look great.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Good Day. What is your set up? Looks like indirect. What is temperature and time to cook. Do you dust with cornstarch and then put a rub on?

I think a pound of wings is 8-10 wings, so if you've already cooked 100 lbs as you said, you're very close.

i do 250-275 for 2 hours. Indirect smoking then. Then you can either crank the heat up to 425 for 10-15 minutes. Or fry them for 5 minutes to crisp up the skin.I’ve personally not seen corn starch change it for me. But, I’m working on variables and testing. I did corn starch for a few batches, these I did not. I could not tell a difference.The ones I corn starch though, I brined them a couple hours, then dried them real good on a rack, corn starch dusting. Then after an hour or so I dry rubbed them. -

yea I saw that somewhere. I’ve got half of the last box left that would put me at 100 pounds ytd. I may need to adjust my goal. I’m not sure about that 8-10 wings per pound. I’m going to weigh the ones I do this weekend and see how many wings there are. I’ve got like 2 dozen ready for Saturday, got a bachelor night.
