Double header today

Earlier this week I was planning what to make this weekend and I thought cottage pie would be a good choice. I had a chuck roast in the freezer that needed to be cooked and my son loved it the last time I made it. 

Today as I was prepping, SWMBO asked what will be for dinner and I said cottage pie. She frowned and reminded me she didn’t like that, or other stew type dishes. In a moment of panic I said (with confidence)”Don’t worry, I’m making you chicken Marsala.”, her favorite dish. She smiled and said “With mushroom risotto?”  I replied “of course”. 😭

Now I’m prepping for two dinners tonight. The roast is in the braise so I’ll just need to do the mashed. I finished all the prep for the Marsala and fresh veg for the cottage pie. Labeling should help. I’ll post pics of finished dishes as I can.

    That looks delicious! 

    My household the boss like the stews and soups, the staff doesn't.  So I often find myself making a few different options.

  • Hmmm? I’m planning to make either a leftover chicken pot pie or chicken salsa casserole . I have the Bisquick cookbook which speeds up the shopping list. 
    Once I made chicken and sausage jambalaya for my workers. One asked what it was with the look of a toddler about to be picky. I said “free food”.
    I love your response. 😆. I’m also thinking of doing a chicken pot pie, another thing my son
    loves but my wife dislikes. We have puff pastry left in the freezer from the holiday that I was going to use for that.

    Never thought to serve it like this!?  I bet that is great.  I always serve over rice and the chicken is cubed and put in the sauce.

    Pan fried the chicken, then I add the shallots, garlic and mushrooms for a saute. Add some chicken stock, Marsala wine and a pad of butter. She likes this method and not a thick sauce.

    @Ragingirishman2 - That is an impressive audible.  Way to deliver some impressive groceries to the family.

    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
