<p />I roasted some anahein chiles directly on the coals before getting the egg up to temp (indirect at 400-450). While the egg got up to temp, I seeded the chiles and took off their roasted skins. Seasoned boneless skinless chicken thighs with some salt and pepper, then added some cut up chiles and a little pepper jack cheese. Wrapped it up, wrapped some bacon around each one, and then roasted at 400-450 for around 30 minutes (until internal temp was 180). I roasted some fingeling potatos with a head of garlic and some olive oil on a raised grid above the chicken (1 hour cooking for them). Tasty good food.[p]IMG_0923.jpg
