Ribeye “Gattling Gun”

Been meaning to post this for a while and then we did another at the Ohio EggFest this past weekend. 

This is what’s called a “Gattling Gun”. I don’t know if they invented it, but my friends from Demkota Ranch Beef that I’ve been able to work with a handful of times love doing these at events. 

It’s basically a ribeye roast wrapped with marrow bones. Cooked low and slow, the concept is that as it cooks, the marrow will seep on to the crust of the ribeye. And the marrow that still remains in the bone is scraped on to the bites as the ribeye is sliced. 

We don’t usually cook it on a “bed” of marrow bones but I also did a roasted bone marrow demo and we had limited space!
