Cooking wild duck

I am a duck hunter and have some wild duck breasts in the freezer. Wild duck is difficult to cook without becoming very dry. Are there any waterfowlers who might have some tips for cooking duck breast in the BGE?

    Coat them in what ever rub you like then cook them indirect until the internal temp is 145. MAX! Wild duck breasts are best cooked to just before they dry out.[p]These were wrapped in bacon first;

  • Thanks for the info and photos. Pictures are worth a thousand words. Love the pic of your dog too! My dog is at least half the reason I hunt. Nothing quite as rewarding as watching him leap into the water to make a retreive. It's much better than the look of disgust he gives me when I miss. I've only taken two Canada Geese on seperate occasions and both times I only broke the wing. That didn't stop my dog from bringing an angry fighting goose back through deep water. I will definately pull out the duck breasts and cook them up on my newly aquired "Egg"

    I find duck/goose kabobs one of my favorite ways of preparing wild game.[p]I cut the breast meat into 1x1 inch cubes, and marinate them in Italian Salad dressing overnight.[p]I then make the kabobs: alternating pieces of bacon wrapped breast meat, red onion and hot banana peppers. I'll cook them on the Egg at around 350-400 degs and pull them when the bacon starts to get done, this usaully leaves the duck meat nice and moist and not over cooked.[p]
    The Duck Hunters Refuge website has a bunch of recipes, some look pretty good, some not so good.
