Freezing cooked brisket

I am planning to cook a brisket this weekend but the one in my freezer is very large. In fact I may have to cut it to fit on XL and cook it on 2 levels. Since there will only be 2 of us I would like to freeze some of. the brisket uncut for later. Have any of you done this and how did it work out? Also, do I need to do anything special to do this? It is about 18 - 19 pounds and very good choice grade.

I have not frozen a brisket but don't see a reason why there would be any issues. Ideally a vacuum sealer but if not then extract as much air as possible before freezing.Regarding cutting the brisket to cook, I would cut it lengthwise so each section has the point and flat. You can drape it over a fire brick to get it to fit until shrinkage does it's thing so you may not need to cut the thing. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I have been freezing left over brisket for many years. I slice the brisket and vacuum pack. To prepare, I boil the packs for 45 minutes. We think the frozen brisket is even better than before frozen. I will say that I have never found a definitive answer to whether the vacuum bags are safe to boil, but then again, I haven't found that it is unsafe either. At this point I don't really care, but you might.
