Need Recipes for Fatties!

OK I give up! I've cooked a lot of things during the 20+ years cooking on the BGE, but never a Fatty. I've been absent from the forum for a while, but the photo's etc; make me want to cook several.
I need recipes/temps/ special set up's if required/ and any information you can provide.

I buy a standard breakfast sausage such as Jimmy Deans, Old Recipe, Bob Evans, etc,etc. I cover with my favorite rub like DP's dizzy dust. I smoke direct on a raised grid to an internal temp of 160. I smoke at 275/300. Good luck, Tom

Hammer, I use the different flavors of Jimmy Dean,along with different Dizzy Pig rubs.Also cut the sausage roll almost thru and flatten and then lay bell pepper(red or green) along with blue cheese (or some other cheese) and then roll it back up into a roll to cook as described. Some add other stuff in the middle like salami, apple sauce, etc.
they are very popular with friends to put on biscuit,etc.

bob evans or jimmy dean 1 pound sausage roll.
remove wrapper and roll in your favorite dizzy pig rub.
smoke at 250 dome for three to four hours indirect till 170 internal.[p]cool, serve on a cracker with cheese and a slice of prime rib
