    Spring Chicken,[p]Any combination of asparagus, snow peas, yellow squash, portobello/oyster mushrooms and zuccini marinated in Italian salad dressing and after removing from the egg, drizzled with that very expensive balsamic vinegar that surfaced today on the forum.

    We love to do pesto with salmon medalions. Sometimes we make the pesto ourselves (bunches of basil + parmesan + olive oil + sometimes pine nuts, but not that often). Grind up in a mill or small food processor and pour over fine spaghetti. Or if we are in a pinch, just store bought pesto -- not bad at all. We do the salmon simply with a touch of olive oil, salt, pepper, and then oodles of fresh squeezed lemon on the salmon. Healthy and light, but very flavorful.

    Spring Chicken,[p] Asparagus wrapped in Prosciutto.[p]Blanch the Asparagus. Drain.[p]Wrap 4 or 5 stalks in Asparagus in a slice of prosciutto.[p]Sprinkle with EVOO, bake at 350 till Asparagus is tender.

    Spring Chicken,[p]I love jasmine rice w/ a tad of lemon juice & soy sauce as a side! MMMMmmmm.... Another good side/ topper is the salsa that I made for Eggtoberfest - I think Wess & Bill Wise both have it.[p]I'm pretty sure that both of those are "ticker safe". :)

    Spring Chicken,[p]Asparagus in a little tin foil boat, kosher salt and DP TS and bacon bits and evoo/butter right along side the salmon. [p]Ed "can't think of anything funny" in TX

    Egret,Whoops - I didn't get around to posting it. I know you don't like estimates, but that's what you are going to get!.The amounts I list here are for the big batch I made for the afterparty.
    [p]8-10 very firm Roma tomatoes
    1 large sweet (white or yellow) onion
    4 limes
    1 bunch cilantro
    2 fresh jalapeno peppers
    salt to taste




    1 Basically you want equal amounts of diced roma tomatoes & white or yellow onion.
    2 Slice your tomatoes in half lengthwise and take out the seeds & pulpy stuff. Cut them into strips lengthwise and then cut them the other direction to dice them. You don't want to put them thru the food processor because that turns them to mush. Dice the onions to the same size.
    3 (toss all this stuff in a bowl as you are cutting it)
    4 Slice thru your cilantro until you get to the stems - throw those away. Now you want to mince your cilantro, then add it to the rest of the mix. Take your jalapenos and do the same as the tomatoes - cut them into very thin strips and then dice them. Cut your limes in half and squeeze the juice into the bowl with everything else. Mix it up and add salt to taste (remember that as each person dips their chip in, the salt from the chip will affect the saltiness of the salsa)
    5 You can add more lime juice, salt or anything else to taste. We often add diced up yellow bell peppers too.
    6 This salsa makes an excellent topping for lots of different things - you should try it on top of a steak!

    peas is the july 4th tradition for salmon, then the next day make a cream sauce with salmon and peas and pour it over toast for breakfast. stuffing is good, i did this with a fresh water whole salmon, but it would work fine with any salmon.

    its definatly on my list this year, i let too many go last year. ive only fished moosehead once, but fishing there under mt kineo was incredible, one of the nicest sceneries anywhere. did you have a place up there, been looking for info on parking to use those state campsites that are scattered around the lake

    Unfortunately no, my dad was thinking about an incredible spot right on the northern corner of the mouth of the Moose River directly across from Mt. Kineo with frontage on the lake and on the river. he never pulled the trigger on it though. We stayed at some sporting camps right their looking up North Bay. That bay behind Kineo is beautiful we used to picknic and swim on that pebble beach right below that 800 ft cliff, they say there was about 300ft of water right off that cliff. [p]Duck Cove down the bay is fantastic too.
