Offering to the rib gods

I’m doing three racks of Costco ribs today that I picked up yesterday on a whim when I was strolling through to restock on some TP. 

Ribs have always been very hit or miss for me but I believe that I have my previous failures worked out (famous last words). 

I’m going to be running about 250-275 low and slow, doing a foil wrap with some butter and brown sugar, then unwrapping and giving a sauce for the final stage. I’ll post progress updates during the cook. Hope you all enjoy and have a wonderful Sunday. 

Edit for some info I forgot to include. The ribs have a yellow mustard binder and were rubbed with MC Honey Hog. I’m planning to use Blues Hog Champion Blend for the sauce.

    Costco tp is the bomb  B) Love the brown sugar/butter idea.  May try that next time

    Ribs look amazing.  I’ve had no luck here getting nice ribs like you did at Costco here.   They pack a nice one on top and a terrible piece underneath that you cannot see.

    I need to try these again.

    There is a honey-butter that works very good as well.

    Surely the rib gods were well pleased with that offering, as was the family!  Great cook.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
