What comes first, the Beer bath or the Egg??? [BRATS]

When cooking Brats, I've always simmered in beer and onions FIRST, then finished on my Egg around 300-400. Yesterday when I suggested someone make Brats for their first cook I gave a recipe from Char-Woody and I was told I had the method backwards???[p]I have heard of some grilling and then simmering in beer and onions but I've never tried it that way. What is the main advantage of grilling before simmering? I learned from true Cheeseheads at a Packer-Backer tailgate party years ago at Tampa Stadium and they always simmered in beer(and drank) first and then grilled.[p]Also, if anyone has the recipe on simmering Brats all day in a crock pot please share as I can't find it.

    i like to start in the beer onion simmer, then move to the grill, then back to the beer prior to serving. . .

    i follow charwoodys firecracker brat method personally, but i beleive the other method is more traditional. i cool them a bit after the simmer, coat with mustard and rub and grill.

    Legally Blind Egghead, I cook them first, then simmer with beer and onions. That's the way I was talk growing up in cheese country....

    sorry... that's not the way i meant it...
    there is no "set" way to do it. that's just the way we/i do it. we usually just make it up on the way as we do it.
    doing it the way i suggested frees up the egg for more fantabulous food cooking.

    I appreciate you look after the Chicken but you must know that I'm going to Sin every now and then, and by that I mean "daily" not "monthly." I was put in this world to enjoy, repeat ENJOY, my stay here, and I consider eating one of those enjoyments (as evidenced by by current condition LOL).[p]Besides, I'm already down 160 ounces. Only 640 to go.[p]Going for our traditional Mexican food tonight, complete with a margarita or two.     I'm a cheese head, I'm nibblin on caraway brick at this very moment to stave off starvation while my chicken tenders and spatchcock bird is a smokin...
    What I do is simmer in beer and onions then grill the brats to get some good grill marks. To keep them plump, hot and happy after grilling they go back in the hot tub of beer and onions to keep from shrinking up.
    Well, that how I cook'em.

  • Legally Blind Egghead,[p]I've done brats both ways...grill first simmer in beer, onions, etc...boil in beer, onions etc. then grill. It's a matter of preference. I prefer to grill first. Don't forgot to add a few small chili's for some extra zing.[p]P.S. If you do web search for slow cooker beer brats, you should get a few hits on how to do them. I've done them in slow cooker but didn't keep recipe.

    Either way works just fine. When I have to do a really large number of brats, like in excess of 200, it is much easier to simmer off a lot of the grease first. You can't believe how much grease comes off of 400 brats. By cooking them first in beer and onions, all that is needed is to color them on the grill because they are already fully cooked. -RP

  • Legally Blind Egghead,[p]I've always been a lurker, only cooked on an egg once, my cousins, did very well. Going to get one this spring.
    Just couldn't avoid this one. I have eaten a lot of bratz and smoked several batches. At a rural gas station I lived near , the owner always had bratz in the crock. When I grew up and started cooking and shooting deer it all came together. I asked him what made his "fat freddies" so wonderful. He told me to (first) smoke my bratz as always then soak them in beer but only Old Milwaukee regular. (not unleaded) I'm a bud man so I used bud. NOT GOOD. He was right. Did several batches w different bratz recipies. Always great after about 10 hrs. @ 140 or so in crock. After about 4 days in the crock they lost there texture and got a little soft. Never got tired of eating fat freddies.
