You bake a potato, then split it in half. Scoop out the flesh leaving about 1/4" against the skin to hold the shape. Mix whatever you like with the flesh, cheese, sour cream, butter, chives, garlic, etc. and put it back into the skin. Rebake it to crisp the top. These are really good. -RP

AZRP, I see, thanks. Have you ever used pulled pork with cheese and the flesh? I keep pulled pork and brisket in the freezer for sandwiches and this might be another way to enjoy the pulled pork. My wife had a knee replacement three weeks ago and since I'm the designated cook, I've been looking for more quick and easy meals to do for lunch.

Chuck/Tx,[p] They are good with most anything you can chop up and mix with the mashed potatoes you scooped out. [p] Though I'd skip the spare tire..[p]

[img][/img]<p />Chuck/Tx, very easy and fast if you can get your egg hot enough! LOL I nuke two bakers for about 5 minutes wrap them in a towel while I get everything else ready. so about 5 min more. cut the potatoes in half and scoop out most of the inside. you need to leave enough so the skin holds together. I then mix that with sour cream, coarse salt, pepper, chives garlic and put back into the skins. you can freeze them at this point and just thaw when you want to cook. heat through and lightly brown on top. yummy! 2-4 large bakers
Crumbled cherry smoked bacon.
1 egg
Diced scallions.
A little milk.
A little Miracle Whip.
Cheese as you please.[p]Mike[p]
