Ok I am going for it. I decided to get the large BGE today, 2/20/07. I am throwing out my last gas grill today. I can't wait to start cooking. It was a toss up between the large and the med. From reading your forms with so many great people here really helped me make up my mind. If there is anything I should know before I fire up my BGE, I would apreceate any advice. What to cook for my first time. So hard to decide becaue I want to try so many things. [p]Pork Butt

  • Pork Butt,[p]Welcome to the wonderful world of Eggin'! I suggest you do something easy (Yet Delicious) for your first cook and one that doesn't require high searing temps.[p]BRATS are my recommendation as they are easy, juicy and yummy! There are many different ways to do them but I found a link to a recipe which is wonderful. I even read a recipe where you slow simmer in beer and onions in a crock pot all day before finishing on the egg. If anyone has that Brat recipe please share it as I can't seem to find it.[p]

  • Well I started up my BGE and decided to try smoke chicken. I used JD Chips. I had to first check out the high temp. first. Got it up to 675 degrees. I could not believe there was still more to go. I cooked my chicken parts at 275 degrees for 2 hours AND NO FLARE UPS, CAN YOU BELEIVE IT. The last 10 min. I put on BQ sauce. We could not believe how moist they were and the taste was out of this world. I am so mad I did not buy my BGE sooner.

Legally Blind Egghead,
you got it backyards... you should smoke the brats on the egg, then put em in a beer bath in a black iron skillet on your gasser while you cook something else on your egg. that's what we'll be doing at bristol again this year!

  • Pork Butt,
i recommend a couple of medium heat cooks, like 350 maximum to "set" the gasket and adhesive. do not be tempted to "see how hot this baby will get" this first few times because your gasket will fail prematurely.[p]cook whatever you were going to on your gasser, then be amazed at the difference![p]don't get rid of your gasser just yet, your gasser will make handy storage for your plate setter & pizza stone and be a warmer.[p]welcome to the show![p]

Thanks for the advice. Glade you mention that. I will be carefull. As for the Gas Grill it's gone. Buddy of mine took it for parts. LMAO.
  • Pork Butt, another reason to hold on to the gasser is a situation like I had this evening. I was using all my grid space on the egg for thin pork steaks. I wanted to grill zucinni and mushrooms and have them done at the same time as the steaks. In short, at times you will need the extra grill space in order to finish cooking several things at the same time. Enjoy the egg, it's a great grill.

Pork Butt,[p]I always recommend pork steaks for a first cook. They take several hours so you have time to play around and get used to your cooker's vent settings. They are very forgiving and can tolerate temp swings between 250° and 400°. You can sauce them at the end or leave them plain.[p]Below is a link to my cookin' site. A Pork steak page can be found in the PORK section.[p]~thirdeye~
