Pork Butt

Unknown
edited November -0001 in EggHead Forum
My son called from Kentucky and told me he's doing a "pork shoulder butt." Apparently, that's what it says on the pkg. He says what it looks like to him is a Boston Butt. And then there's the one that costs a little more called a "pork butt." What's the difference between these cuts? Is there one roast that stands out as best selection for pulled pork? Thanx

  • ern,
By definition the butt comes from the shoulder, so calling it a shoulder butt is redundant. A pork butt and a Boston Butt are the same thing, the butt end of the front leg of a pig. The shank end of the leg is called a picnic. A shoulder would be the whole shoulder consisting of the butt and the picnic. There are other names, but basically a butt should be a butt should be a butt.....[p]TNW

The Naked Whiz,[p]Here is a nice adder to the tale of the butt. LOL It comes by way of the National Pork Board. [p]~thirdeye~[p]"In pre-revolutionary New England and into the Revolutionary War, some pork cuts (not those highly valued, or "high on the hog," like loin and ham) were packed into casks or barrels (also known as "butts") for storage and shipment. The way the hog shoulder was cut in the Boston area became known in other regions as "Boston Butt." This name stuck and today, Boston butt is called that almost everywhere in the US,… except in Boston.
