Daughter & I are really liking gyros lately and want to try making our own.
I have a Meat Stick - Vertical Spit from CGS and like to try a method that
would work without the meat falling apart.

Kronos gyros is the standard gyros purveyor in the US. I believe their most popular product is beef/lamb pressed together.

You wrap the meat in aluminum foil on the vertical spit. Remove the aluminum foil for the last 15 minutes of the cook.

Pro tip: cook Alton's recipe on a horizontal rotisserie, shoot a pic with portrait orientation. Post here and it will magically appear vertical. Perception is 99% of reality.______________________________________________I love lamp..
