Rick's Tropical Delight,[p]On Sunday I intended on picking up Fajitas Preparados from my local carniceria. The place was so crowded I gave up and went to Kroger. I couldn't find comparable fajita beef, but I did find what was described as boneless beef wafer steak. I marinaded it in orange and lime juice, fajita seasoning, sliced onion and fresh cilantro. Egged it for two minutes a side with mesquite smoking chips. My family thought it was awesome - I thought the cut was not as tender as I would have liked. I'll keep refining this recipe.[p]

<p />Rick's Tropical Delight,[p]Nothin' as nice as your pics, but the above is my best cook of the week, a 3.5 lb. beef tenderloin butt, seared and dwelled. [p]Below, a few slices served with red carrots, polenta mixed with the last of the summer sweet corn, and some sautee'd onion and garlic (hiding under the knife.)
[p]Between four of us, there was maybe 6 oz. left at the end.

I wondered if you went in. My wifes office closed so she got to stay home......I on the other hand am "essential personel" so I get to trek to work later. Depending on what it looks like I have a coworker who is evil kenevil/dale earnhart wrapped in one that I can call and Kathy to come get me.......yeh I'm a wimp in the super crappy weather but she has a big truck with four wheel drive and a skid plate.[p]Two years ago she picked up our boss and myself........we still have nightmares over that ordeal and her insane driving.[p]

except that if you follow the recipe on PAGE 233, you butterfly and roll the flank steak whole. . . you don't cut it into sections until after its cooked. ..[p]but that lawn ranger boy, he likes to do things his own way :-)[p]you know, i always think about cookin up some tater tots, but i'm always afraid i'll revert back to what i did with them in junior high school, i.e. throw them at other kids, in this case, my own!!

Rick's Tropical Delight,[p]Rubed with lots of DP Jamaican Firewalk, then put on the egg at about 650, then immediately shut down. Turned every 15 minutes for maybe an hour or so.
