    @sumoconnell - Thanks and I presume that is the same for beef back ribs or just the skirt steak?
    Regardless, it's on.

    Regardless, it's on.  
    I use beef ribs that don't have the chuck on them, cut them into individual ribs, score every inch or so to the bone. Cook those like a steak too (400f), but they take a longer time to cook with the bone.  In the cooked  pic you can see the meat separate from scoring.
