    If you are not wanting to deal with grease dripping into the egg then the Kettle-Q is another option. It is only 14 inches so not really sized for the XL.

    They have other square options that might fit on the XL. I suck at geometry so I would just get a piece of cardboard and cut it to the dimensions to see if the square or rectangle fits inside the egg.

    Get the same steel used for a flat top griddle.   I think it's SS304.. not sure and being lazy.  I just bought the Misen Oven Steel (food grade) you can bake, blacken, etc.   Be sure to season. 
    there are no commercial griddles made from type 304 stainless. Almost all are hot rolled mild steel with a polish.
  • The Misen Oven Steel is indestructible, and its A36 carbon steel.
    Would be very expensive in SS304 in that thickness.
    Mine's been on order since the kickstarter  waiting for the delivery...
