We are having guests and I am planning to cook 4 two inch prime beef filets. The problem...guests prefer steaks medium well (I have tried educating them to no avail.) We eat ours medium rare. I cannot figure out how to use the hot egg method (700 degree dome for 90 seconds per side and two minutes with all vents closed) and come up with two different internal temperatures. If I take ours off first they will be cold by the time the other steaks come up. Any hints out there. Thanks..Richard

    I'm surprised at you asking such a question with all your professional cheffin' experience!? Crank up both eggs and let them cook their own......

    sear all the same. take them off, dial the egg back to 400 and let her sit there tile she's really at 400.[p]toss theirs on 1 or 2 minutes before yours, then toss on yours.[p]
    let the filets sit at room temp for an hour. theirs go on a 250 fire first, and yours go on when theirs have gone up 15 degrees. keep the fire at 250 until their steaks are 140.
    yours will be 125 or so.[p]take them off, spike the dome temp, and sear to your liking. theirs will be pushing 155-160 (gawd, that's tough to type). you'll be 135-140[p]the difference in timing can be moved up front rather than at the end of the cook. they all can come off at the same time.[p]

    Someone borrowed my handle while I was out of town this weekend. Maybe I will have to find another handle, any thoughts. "Dirty Old Man" is spoken for.

    Uh Oh!! I thought that was you, but I couldn't imagine you asking such a question with your background. You should get a new handle and a PROFILE!! How about "Sandbagger"?
