Baby Back Ribs (2-2-1 Method) - Eating Later

Quick question on the last step of the 2-2-1 method. If we are planning to eat a couple hours after the ribs are finished, does it make sense to do the last 1 hour on the grate right before eating or do it all at once (2-2-1) and then foil until we eat? Thanks.

Personally, I prefer the let the ribs rest for a little bit before serving. Let's them disperse some excess heat, which makes slicing ribs much easierXL & MM BGE, 36" Blackstone - Newport News, VA

Keep it simple ,dont overthink it and forget the foil. 250 dome temp , leave shut for 3hrs and check them real quick. Recheck in another hr.
My baby backs take 4.5-5 hrs and are perfectly tender. I go for internal temp of 187-190
