Thats weird. i just finished 2 butts that were about the same size and mine were on at 10pm last nite at 250 grid. they were pulled of at 9:30 this morning at 200 degrees. they look great. wrapped and put in cooler. That was the fastest i have ever cooked 2 butts of that size. Used a guru. i did have the butts higher in the dome than i ever have by accident.

Bubba_T, Good idea Bubba T. I know when I'm in a hurry I get the ole ladies blow dryer out of the bathroom and use that. Things heat up in a hurry. Other than a few ashes in her hair, she got over it!!LOL

That seems awfully quick for them to get done (not like I'd know being pretty much a newbie - but figured you'd spend around 13 to 14 hours on them). [p]I thought I'd be eating PP sammiches for lunch. In fact, invited my son in law over for some. But had sloppy joes instead. [p]Didn't know if it were the temperature here (definately not cold by most standards, but had a little sleet down here in Valdosta last nite). [p]Anyway, they'll be done when they're done. And if they taste like they look and smell, they'll be pretty tasty. [p]Have my egg hanging at 250 now, and temps headed up on those butts. [p]I'm getting hongry!

Well, im getting ready to pull them so i will let you know if the quick cook was detrimental. We still have snow here in Clayton. Pretty darn cold outside.

Thought I would ask. Did you try to use a wiggle stick through the bottom vent before the fan thing? Most of the time if your temp drops and you have changed nothing, poking a bent wire close hanger through the bottom vent to clear ash and small pieces of lump from the holes will work. Just slide the bottom vent back to where you had it and your good to go.

Just trying to help out! Even if my temps are rock solid I always wiggle stick it before I go to bed just to make sure it will go all night.[p]Just bend a coat hanger at a 90 degree at least three inches long. That way you can push it through the holes and "wiggle it" to open up the holes. I made one from a welding rod jamned into a wood handle.[p]You can search the archives for "wiggle stick" and get all kinds of ideas.

Guess I need to know a few more tricks. [p]I had to leave for a couple of hours. Had dome at about 240 when I left. Butts were at 178 and rising pretty steadily. [p]I closed the door slightly so wouldn't get overdone. [p]When I got back, dome was not quite to 150 and the butts were cooling off and were around 170. [p]Fire had gone out on me. [p]Wasn't for a lack of lump. Either had needed to use the wiggle stick or just shut the door too far. [p]Rookie mistake. Dind't want to leave them, but honestly, they took one heckova lot longer to cook than I had planned on andjust had someplace I had to be. [p]Tasted em - and they are definately the best butt I've ever cooked (and I've always liked the ones I've cooked on water smokers in the past). [p]Just don't know how hot they actually got to (though I know they got high enough to be safe). [p]These - with the Dizzy Pig Dust on em are amazingly good. [p]So I guess all's well that ends well. [p]BTW, I did make another "homemade" tool. Not much to look at, but I took an old fork and bent the tines down so that they're about 1/2" long pointing down. SPread em out a little. I bent the handle so can hold on to it. And use it to pull the pork. [p]That sure worked well. [p]Beats the heck outta trying to pull it and burning your hands up. [p]
