Tri-tip - Modern Caveman Style

Never had tri-tip before, I wasn’t too sure what to expect but I am happy with the result. Tri-tip is fairly uncommon here in the GWN so I jumped on the occasion when I saw fancy grass fed on Costco.
Cooked it sous-vide 4 hours @ 131F and finished it directly on the coals, cavemen style for a couple of minutes. Seasoned with Schwartz beef seasoning.

Nailed that cook. That finish $$ shot is impressive.
I was hooked with the caveman finish. For me, you cannot beat the caveman char regardless of how you get to the internal pre caveman temperature.
You delivered-congrats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

I looked at that thing for a couple of minutes trying to figure out the right way to slice it. Looks good. They are starting to pop up around my area too. I haven't pulled the trigger yet, I'm awaiting the next special occasion. I didn't look at the weight, but they are running $80-$90 ea. here.
