Tri-tip - Modern Caveman Style

Never had tri-tip before, I wasn’t too sure what to expect but I am happy with the result.  Tri-tip is fairly uncommon here in the GWN so I jumped on the occasion when I saw fancy grass fed on Costco.

Cooked it sous-vide 4 hours @ 131F and finished it directly on the coals, cavemen style for a couple of minutes.  Seasoned with Schwartz beef seasoning.

    Nailed that cook.  That finish $$ shot is impressive. 
    I was hooked with the caveman finish.  For me, you cannot beat the caveman char regardless of how you get to the internal pre caveman temperature.
    You delivered-congrats.

    It does!  and it was super tender, not sure if it was because of the sous-vide but it was very close to filet mignon from a tenderness perspective.

    It helps getting my cuts straight 🤣😂

    I looked at that thing for a couple of minutes trying to figure out the right way to slice it.  After doing a bit of googling, it looks like it was the right way.

    Looks good. They are starting to pop up around my area too. I haven't pulled the trigger yet, I'm awaiting the next special occasion. I didn't look at the weight, but they are running $80-$90 ea. here.

    $80-$90 each is crazy. That's about $30 a pound for Sirloin Steak. If your seeing Wagyu at that price, OK.

    These have gone up in price some over the last couple years but they still run good sales. $108.00 for "3"...

  • Excellent.  Tri-tip has become a favorite for me.  Lately I’ve been ordering them from SRF.  I think they’re only around 80 bucks currently for two pounds or so.

    Holy sh!t. I’m in SoCal and it’s normally about $5/lb or if you buy bulk at restaurant depot or smart n final it’s like $3/lb
