Christmas Eve - First Beef Tenderloin

Thought I'd try my hand at beef tenderloin for the first time this year on Christmas Eve. Picked up a trimmed beauty from Costco and woke up around 7am to tie, salt, and wrap. Just under 12 hours later, I got the egg going at 275 indirect. Right before going on, I applied a nice coat of "Bull ****" to all sides and put a few hickory chunks on the flames. Cooked for exactly 1.5 hours when the thicker cut hit 125F before taking them out and really getting the flame going, around 600F direct. Seared for one minute per side, pulled, rested for 5 minutes, and then sliced.
Served with red wine sauce and sautéed mushrooms.
