Getting Tired of Turkey

Was getting tired of Thanksgiving leftovers, so i decided to present my family with a different type of Roast. Pork Crown Roast with a garlic parsley crust and butter bath.
Served with roasted garlic Brussel sprouts and yellow squash soup the wife made.

When we were getting tired of the turkey leftovers, Mom would dice the remaining meat, throw it into a crockpot InstaPot with a small box of Velveeta and a can of Rotel Tomato & Green Chile, and we'd make "burritos".

My mom would chop it up and make Sloppy Toms or make gumbo. I would toast bread, add sliced dark meat in preference to breast meat, add good cheddar, add bbq sauce and microwave.
