I went with a dry brine. My bird is currently spatchcocked and dry-brined in the fridge. I hit it was 1/2 cup of Tony Chachere's mixed with 2tbsp of baking powder.Plymouth, MN

I use a variation on Alton Brown's brine recipe for 24 hours. Works great for me. Never tried injecting it. The bird will go on the BGEtisserie.Cincinnati, Ohio. Large BGE since 2011. Still learning.

When we get a fresh bird I always brine. This year it's just the two of us and Bride of Teefus got a moderately sized Butterball that has been pre-brined.Michiana, South of the border.

This ones 12 lbs. Brined then injexted. Stuffed with apples and apple cider in the holder. Seems to be cooking ok. Dome temp 300. Hour in.Columbus, Ohio -
