Mmmmm... hanger steak is some delicious beefy goodness. i've always had them trimmed so each one is about half that width. good stuff.

@nolaegghead I know medium rare SV always looks more red than conventionally cooked meats. I have 2 poly science units and I am sure they are very accurate.Southeast Louisiana

Yeah, I figured. Cuts with more myoglobin are more red. Filet and rib are the same way.
