Elk Meatloaf

My hunter friend dropped off a bunch of elk from a harvest in Colorado 10 days ago and I egged some Korean-inspired meatloaf for dinner on this chilly evening here in the 302. This is my first game cook of the season and it won’t be the last!

    Arugula!  (I sauteed onions, celery, and sweet-hot jalapenos in evoo and added a whole bunch of arugula at the end.  Added to the mix some ssam sauce that I fortified with honey and a bit of curry ketchup).  I love meatloaf and am always trying to experiment.  Very hard to mess it up, even for me!
