Wagyu Brisket

Beautiful day here in South Carolina, weather has finally dropped out of the 100+ heat index for the first time in quite a while. So decided to put a wagyu brisket on the XL. Cherry wood for smoke and simple salt and pepper. Hope y’all are enjoying a nice weekend with family and friends.

It was about 18-20 lbs. trimmed probably closer to 18 or a little less. I put it on about 10:15 this morning. We will eat around 6:30 or 7:30 of course that depends on when the guest of honor decides they are ready. Wagyu typically cooks much faster than an angus brisket.dmchicago said:Beautiful!

What cook temp did you run with as that is quick for that weight (18 lbs in 6 hrs...), even wagyu.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
