Steak and potato night

The potato was the time consumer. It added 2 hours to the cook. Again the  time spent was worth it.

    Very nice.  Sometimes I cheat and microwave the potatoes to get them going.

    That is perfection right there.  Nailed that cook.  Congrats.

     First put the potatoes on at 400°for 1 hour then let them rest for 1hour. After cooling enough to handle cut the potato length wise so you will create a bowl with the skin after scooping out all but a thin layer to support the skin. Scoop out the meat of the potatos into a large bowl I add heavy cream, butter, salt and pepper and mash with a fork utill smooth and airy. At this point I mixed bacon, cheddar, green onion and garlic powder. Stuffed mixed mash back into skins and sprinkle with more cheddar and green onions. Place back on the egg and cook until internal temps is over 165° and the cheese browns up.

    I agree with @EggNorth. I just nuke them then scoop. Add what you want to the innards and then throw them on the grill.
