Paul Kirk has two great cookbooks. Any by Steven Raichlen are good. I Like Smoke & Spice by Jamison & Jamison. Good luck, Tom

I like to cut it into about 3/4 inch cubes and make a really good smoked beef vegetible stew. [p]In addition to the usual Potatoes, carrots, onion, and celery, I add lots of other veggies such as fresh green beans, corn, peas, zuchini, lima beans, cut okra, black beans, and maybe some red kidney beans.[p]Great stuff for a cold winter day!
