OT - crab cakes

Can’t remember the last time I made crab cakes, but I enjoyed this cook (indoors), and figured I’d share. 

Recipe was from Chef John’s foodwishes blog. Simple and easy. 
Subbed Ritz crackers for saltines. Out of Old Bay seasoning, so made some from a clone recipe I found online. No Worcestershire sauce, so subbed dark soy. Homemade garlicky mayo in the mix too. 


Made a remoulade sauce of sorts - leftover pickles and mustard bbq sauce from Truth BBQ in Houston, more homemade mayo, lactofermented ketchup. Caliqueen made some mixed veg with corn. 

Plated shot sucks, because... hungry. 

Will most definitely do again. Excellent outcome for relatively little effort.

    I developed an affinity for these whilst dating a woman in Lewes, DE some years back, I was living in Nebr..... long story that of course didn't work out, but I miss Maryland Blues more than her!

    If it were anyone else giving that substitution list I would have to ask why the hell did you continue!

    I'm not sure what authentic crab cakes are supposed to taste like, but the subs seemed to work well. Usually have Old Bay on hand, because I like the stuff, but was out of it.  Luckily, had most of the ingredients in the spice cupboard though.
