Reverse Sear

Can you reverse sear using a eggconvegtorr? Start with the sear on the grill, remove the steak and grate, put in thE convegtor and then bring it to desired internal temperature.

Yes you can do that but then it’s not really a reverse sear, it’s just a normal sear. Reverse sear is a low temp cook first either by smoking in the egg and then searing or sous-vide and then searing. Your method can be done, but I find it easier to reverse sear because it’s easy to increase temps on the egg, it’s not so easy to bring temps down. Once you get the egg to 550 or whatever you need in order to sear, you’d have a hard time getting temps back down below 450 or so for a while.

As Dain mentions, you are describing the original sear then slow method. You can absolutely do a true reverse sear using the conveggtor. While I now use a 2 level fire with a kick ash basket and divider, I used to do it all the time. One thing I found that helped was when I get close to target temperature (5 degrees or so), I throw open the vents so the fire starts heating up. I then pull the meat at the target, remove the conveggtor and wait a few minutes for the grate to get hot. I also seared as close to the flame as possible. Worked fine most of the time. Occasionally I was impatient and didn’t let the grate get hot enough, but still tasted good. Just lacked that instagram crust.

And to really kick it up a notch, do a Cowboy sear. Lay the steak directly on hot coals. I've been doing this for months, and SWMBO is none the wiser.

What your describing is a forward sear and yes it can be done on the egg. I would advise against it because when you start choking the fire down for the roast segment of the cook your starving a high heat fire of oxygen and that will create dirty smoke that will mess with the taste of your steak.EstoSmoke said:Can you reverse sear using a eggconvegtorr?
