All out of order as usual... granulated honey, schezuan peppercorn, shallot powder, soy sauce, sesame oil.

Did two pieces in the cast iron and one right on the grate

Ready for the one straight on the grate

The slightly overcooked piece is the one right on the grate.

I'd say other than canned tuna or sushi this is (roughly) the standard. What's your typical method?

@loco_engr, check the frozen food section of your market. You may find tuna (or other varieties) there. My ALDI's has a good variety of wild caught tuna, cohoe salmon, mahi mahi and flounder, sometimes even king crab legs and lobster tail. Maybe not top shelf quality, but I live in a one horse town too. =) But it appears you have no ALDI's. Maybe another store will have (or could get) frozen seafood. Good luck!

I hate it when I go to the kitchen for food and all I find are ingredients!

Nice work! Easily one of my favorite seafood preparations. I can’t remember the last time I ate tune that wasn’t raw or just seared. Tuna season can’t get here fast enough!

So buy a tuna steak fo you and a flounder filet for her. Both should take about the same time to cook. Win win.

Yeah definitely over cooked two pieces the first time. Round 2 was as good as it gets for me.
