Thanks for the compliments. This was the most stress free brisket style cook I’ve ever done. I lit the fire at 6am & put meat on about 8 before I left to go for a job site inspection. Mrs3969 handle the egg while I was gone luckily it just cruised were I had it dialed in at.@gonepostal - how did you cook it in the IP? I’ve done a couple under high pressure for 2hrs and they have came out great. I’ve also used the IP to STEAM some pastrami when I actual took the time to do it correct. Those involved seasoning the night before a long smoke then into the fridge overnight and into the steam the next day.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. @Mattman3969 I rushed things. I ended up only going 1.5 hrs on high and needed the extra 30 mins. I originally pulled after an hour. Not my best effort. But it was getting late and I really didn't want to eat at 9 pm on a work night. I will give the IP another chance. Thanks for the advice. 2 hrs next time!Wetumpka, Alabama
