St. Patty’s Day Pastrami Reubens — Pic Heavy

Soaked and smoked a couple of corned beefs from Whole Paycheck over the weekend. Ate one Sunday night the traditional way, with cabbage and potatoes and carrots. Saved the other for reubens on St.Pats. 
Sliced the meat thin and steamed it over some chocolate stout for about 2 hours before construction and consumption. Pastrami reubens rock.

    One of (if not) my favorite sandwiches. Love them with corn beef as well as pastrami. Marbled rye? Very nice.

    Thx -- I'd probably be eating them to an early grave if left to my own devices and without SWMBO's watchful eye.  We call this a "sometimes food".

    It was a funky, chocolate peanut butter stout and tbh I didn't love the taste out of the can.  Because it was so strong, I cut it with some h20 before letting it hang out in the oven at 275 for about 2 hours.  Perfectly moist, impossibly tender and no taste transfer as far as I could tell, which I think probably was a good thing.  I guess I wasted a can of "interesting" stout, but it just wasn't to my taste so I feel like it went to good use.
