Experimenting with the Smoking Gun

Weather was sucking again today and I had some chicken breast that needed to be cooked.  I haven’t really used my smoking gun much so I decided to play.  

Took a Tupperware container and drilled a hole for the smoke tube. Used an earplug to seal the hole after smoke.  Put a heavy dose of SPOG on the breast and put on a cooling rack in the container so smoke could get all the way around the chicken.  

Took everything to the garage to make some smoke

Let the chicken sit in the smoke for about an hour then into the SV at 147 for 2hr. I could still smell smoke at this stage. Then put some moz slices on top of the chicken and into the AF to melt the cheese.   

Plated with some sun dried tomatoes and a balsamic reduction drizzle. 


The chicken had a nice hint of smoke but not real strong. Actually just right for this style dish.

    Buddy made me an old fashion with smoked ice. Was really good! 

    He put ice in a bowl, covered with plastic wrap, added the smoke and re-sealed then back in the freezer for a while.

    Ice and glassware take on smoke really well. Doesn’t take much time or effort it seems. I’ve had one of these in my cart on several occasions and always set it aside for later. I’m worried it will get used like my Anova. Wait, my Anova is still in its box. 😂

    Pretty neat! I've tried smoked ice when smoking cheese, and it was interesting. This way would be way cooler :sunglasses:

    How did it take the smoke? And if you answered it I missed it.

    @moleman - the smoke was still present in smell after the SV. I was worried it might wash off.  It wasn’t strong but it still had a nice hint of smoke that I wasn’t used too not using the egg.
