Chuck/Tx,[p]I confess I was a little partial in my vote. I used to live in a house with a small grove of pecan trees out back. Even when I was a blind and foolish Weber-ite, I'd pick up the windfall wood and fire it up! I always used pecan for fowl and other wood for beef and fish and such.[p]Hank

Pecan's my favorite too. Grew up on a 40 acre orchard in South MS. They don't sell the pecans anymore, but I always bring back a downed limb or two when I go back home for a visit. Katrina made certain that my supplies are pretty much endless for the next few years or so.[p]Ever try with steak??? Absolutely my favorite during the bake part of a T-Rex.[p]Cheers.

SouthOfI10,[p]I hear you. I grew up well east of Atlanta and there was always pecan wood on the ground. Even the occasional hickory or oak that someone was sawing up. Funny thing about mesquite (which is my least favorite chip) is that my old dissertation director, who was from west Texas, said that mesquite was what they used to cook (open fire, no grills) when there was absolutely nothing else to burn. Apologies to mesquite folk on the board.[p]Hank

Hank, the wings are cooked and in the kitchen. I cooked them direct, on a raised grate. The fire was pretty hot, about 400 dome, so they got done in around 30 minutes. The skin is crisp, perfect. Seeing what a nice fire I had, I took a whole chicken out of the frig that my wife was planning to cook, quickly cut the backbone out, sprinkled my magic dust on it and put it on the raised grid. Turned it after 15 minutes and it is looking pretty. Decided to use pecan for it too. Gonna have plenty of chicken -- come on over (grin).
