Egg yolks



Trying my hand at salt/sugar curing egg yolks with an end game of grating over top of some fresh pasta. Gonna let them sit covered in a salt/sugar bed for 7 days then rinse and finish in the oven at 200 for about 1 hour.

Microplane over top of some pasta.  We will see how this turns out.

    Cool!

    I saw a YouTube last week where they froze eggs, peeled them and sliced rounds. They then fried them up for sliders. Looked cool as hell. They looked like mini fried eggs. Anyhow, I’m following.

    Those look fantastic.  Once you burn through that batch of eggs you should try Runny Yolk Sauce.  You'll need a sous vide device.  I squirted that sauce on everything, would make it again but I still get hell from my wife about it.
