Is 4 Days too Long to Brine a Turkey

IMO, a little too soon. I've gone 54 hrs. w. med. turkey, and it was fine. I suppose if your bird is bigger, it might take 72 hr.

Got it brining this afternoon, so it'll have a bit less than 3 days. As well as the salt, I blended rosemary, thyme and sage and added pepper, including a lot of crushed green and pink peppercorns. It's sat in a cooler outside now, I'll leave it uncovered for the last 24 hours.

I did an 18 hour wet brine on a 20 pounder this past Thanksgiving. It turned out really well. Kosher salt, brown sugar, and Penzeys Northwoods seasoning.Michiana, South of the border.
