How long to cook a 13 pound turkey? And at what setting?

Hi all and Happy New Year to you all.[p]How long should I cook a 13.5 lb. turkey, at what heat setting and to what internal temperature? Also, how do you guys brown the outside of the bird? Suggestions?[p]I hope '07 is the best year ever.

    The thanksgiving bird was appx. the same size. Indirect @ 325 dome took about 2 1/2 hours till breast was at 165. Don,t worry about browning, the Egg will do it all by its self!! Some of the best, moistest turkey I have ever had.

    Are you sure only 2 1/2 hours???[p]What if you are doing a MadMax turkey?? I have a 13lb turk on now at 325! [p]Please someone confirm how long?
    I have a water vapor and the turkey on an extended rack.

    325 degrees, indirect with a drip pan should take about 3 hours. You can get good browning with a butter paste rubbed on the outside. Also, running the temp. up to 400 degrees or so the last 15-20 minutes helps with this. I would pull it at 160 degrees in the breast, 170 in the thigh. I would suggest you review the "Mad Max" method found here :

    We did use a close version of MadMax's method, iced the breast, etc. 2 1/2 hrs. is about what ours took, and egret has 3 hrs. on his followup , so real close. Good Luck with yours, and please let us know how long it took, and how GREAT it was. [p]Todd

  • JimiRayClapton,[p]13# Turkey, Mediun egg, Inverted Plate Setter, Vertical Roaster, Drip pan with apple juice, 250 - 275, about 4 hours till an internal temp of 160[p]The Medium Egg just barely fit it in, and it was delicious. Also used Dizzy's Shakin the Tree Rub.

    JimiRayClapton, follow MadMax's turkey direction for the first time, but figure about 12-15 minutes per pound. One trick I did with the last two birds (2o & 25) is when they were done I wrapped in foil and warm towels and place in/or under a Styrofoam cooler, this keeps the bird warm and will be ready when ever your ready to eat. My 25 pounder sat in one for over 6 hours and it was still a rave, a tad soft skined but was perfect.

    I don't think it would hurt anything, you are looking for internal temp. so it should slow down your cook. Might need to tent ar cover with foil if outside is getting to brown. PLEASE don't my advise as gospel, because I am relatively new to Egging myself, just trying to add what I have seen and experienced so far. Good Luck!!![p]Todd
