Turkey(s) anyone...

Morning All:

Our office Thanksgiving luncheon is today & for some crazy reason I volunteered to cook the turkeys...I put four 12# birds in the John Ash brine Sunday evening...took them out of the brine on Wednesday evening to sit overnight in the fridge to dry the skin some...this morning put some seasoned (sage, rosemary, thyme) butter under/on the skin (along with a light coat of olive oil)...here they are sitting with a bag of ice to cool the breast while waiting for the Eggs to be ready



I was a little concerned about being able to get a two birds on each Egg, but it seems to have worked...should be ready in time for me to drive to the office...hopefully I'll have time (and remember) to take a finished picture or two.
