biglabmaggie, According to Steven Raichlen’s book Rib’s Rib’s Rib’s, you should build a two zone fire. So I guess build a fire on one side of the egg or just put a pice of foil or a cookie sheet over half the fire an put ribs on it. Preheat to 325 to 350 and brown both sides of the ribs. The ribs will be cooked though after 1 ½ to 2 hours. If the ribs brown too much wrap them in foil. The ribs should be nice and crispy on the outside.
Maybe some of the other members and help out a little more but the should give you the temp and times. Good luck

I got my idea from Raichlen's book as well and am confused about how to cook them. He says in the "variation" section to cook on the egg direct at 300 turning every 15-20 but doesn't say how long. I am far too anal to cook by feel alone...especially when I'm cooking for others.[p]Anyone else have any ideas on how long this cook might take or if ribs would be good cooked direct only?[p]Thanks...[p]

The meat should draw away from the end of the bone about 1/4 1/2 in. also thrust a toothpick in between the bones if it inserts easily it should be fine. problby about 1 1/2 to 2 hrs.

Thanks for the help. Is the 11/2 to 2 hrs. considering a direct cook at about 300? Have you ever cooked ribs direct only and if so how did they turn out.[p]Thank you...
